Why our Biscotto baking stones are better.

Biscotto stones are made by hand using metal and wood molds, air-dried for weeks, and then fired in a brick-lined, wood-fired kiln at 1,650ºF+ . This is not a product with accurate CNC manufacturing tolerances. Which in the past has been fine. Historically, Biscotto stones have been used in large, hand-made commercial brick pizza ovens from Naples, where there is a certain degree of dimensional tolerance.

But smaller, modern metal pizza ovens from Ooni, Gozney, Alfa and the others don’t afford as much wiggle room. A stone either fits, or it doesn’t. And you don’t want to be stuck with a stone that doesn’t fit, or looking at the prospect of buying an angle grinder to sand it down to make it fit.

The good news is that we fix all that.

Traditional methods meet modern tooling.

We don’t buy pre-shaped Biscotto stones for the various pizza ovens from our Sorrento producer. Instead, we buy large volumes of Biscotto slabs, carefully sort each piece, and then cut and finish them using modern cutting, grinding, and finishing machinery.

We identify and throw away material you don’t want in your oven—material with big holes, chips, dents, humps, deep scratches or gaps, or that is too thick or too thin, simply gets tossed.

Next, we calibrate each stone for the proper thickness (if your stone has too many thick spots, it won’t fit your oven). Then, we cut straight lines and accurate 90º angles. We bevel and sand your stone’s edges. And finally, we remove rough spots that might catch your pizza peel—don’t worry, we don’t spoiling the stone’s natural, handmade finish.

That way, you not only know your stone is going to fit your oven, you know you aren’t going to get a lemon.
