What Pans Can I Use in My Pizza Oven?

This is a bit of a trick question, as the answer depending on how hot your oven is. If you are using your oven for retained heat cooking, as the oven falls into a typical 300-550ºF range, you can use any pan you would use in your regular oven. But be aware that your pan will be exposed to hot coals and soot, so don’t use anything you’ll worry about scorching, or changing its long-term appearance indoors!

In general don’t use non-stick.

Be careful with handles that are not rated to higher temperatures, including the handles on skillets and the knobs on Le Creuset dutch ovens.
