Should I use a perforated pizza peel?

Yes.

If buying both perforated turning peels and perforated placing peels is within your budget, by all means, yes, buy them. They leave excess flour on the counter, not in your oven where it burns and gives your pizza a bitter flavor.

If you can only afford one super-nice peel, get the perforated placing peel and a more economical turning peel.
