Grill Add-On

There are various add-ons for Weber kettle grills, gas grills, pellet grills and Kamado grills that attempt to capture a little bit more heat across the top of your pizza, including KettlePizza, the best known grill insert. The idea is to bring more serious pizza making to your grill. But none of them do a significantly better job at making pizza than a standard grill with a pizza stone. Given the $150 insert price and the availability of portable pizza ovens, we think the grill add-on is a bit of a non-starter.

Also, because the heat source in a grill with a pizza stone is from below, there will always be a mismatch between the heat in the grill dome and the pizza stone, where the stone can become scorching hot, burning the bottom of your pizzas, long before they’re baked on top.

A better option is to use a Biscotto stone rather than a conventional cordierite pizza stone (and definitely don’t use a baking steel) on your grill. Because the Biscotto stone transfers heat more slowly than a standard pizza stone, you can bring your grill up to higher temperatures without burning the bottom of your pizzas.
