A generic term for a flat tool used to move pizza, bread, pans and wood inside a pizza oven. Peels can serve multiple purposes, including placing and turning pizzas and bread, and moving objects. Peels come in a range of shapes and sizes, from a small peel used to place or turn a single pizza, to a long and wide peel used to place multiple loaves of bread. Placing peels tend to be rectangular, while turning peels are always round. Perforated peels allow excess flour to fall away from the pizza.

Peels can be made of a range of materials, including wood, anodized aluminum, galvanized steel (though you should avoid it), and stainless steel.
