Hybrid Gas/Wood Oven

A term used by Fontana Forni and others to describe an oven than can use either wood or gas as the fuel, but not both at the same time, without having to change the burner, as you would with a portable pizza oven with a Multi-Fuel option, including the Ooni Karu 12, 12G and 16.

While there is an advantage to having this feature compared with a portable pizza oven, this technology is inferior to a true Dual-Fuel pizza oven, where the gas burner can operate safely and efficiently along with a wood fire. It’s worth noting that the burner takes up valuable cooking floor space even when it is being used in wood-fired mode.
