My Story

A 25-year pizza journey

After years of lining my ovens and grills with bricks, I built my first pizza oven using a set of plans in 2001, and I’ve been hooked ever since. I founded Forno Bravo in 2003 and wrote the Pompeii Oven book in 2004, helping a generation of DIY oven builders reach their dream of owning a wood-fired pizza oven. In 2008, I designed the Primavera, a small refractory oven that helped usher in the new era of portable, affordable ovens.

I was also an early, vocal advocate of Antico Molino Caputo flour, and played a supporting role in their success in the US. I sold Forno Bravo in 2015, and it continues to flourish today.

Over the years, I’ve lived in Florence, taken pizza making classes in Naples, shared pizza with Antimo Caputo, ridden on the back of Enzo Coccia’s motorcycle through the backstreets of Naples, and helped tens of thousands of people discover the pleasure of wood-fired cooking. It’s all been a wonderful ride.

Today, I’m exciting about making it easy for a new generation to enjoy an authentic piece of our common cultural and culinary heritage.

How we work for you

Our stones are produced by hand in Sorrento, Italy using traditional materials and methods. We buy large volumes of Biscotto slabs, closely inspect each piece, and then cut and finish our stones using modern equipment.

We ship our stones to the US via container ship to keep our costs low, and then individually pack them in the US. We warehouse our packaged stones at a state-of-the-art logistics facility in Richmond, VA—right next to the port and a major domestic shipping hub.

We offer free ground shipping on all sales to the lower 48 states, and we always do our best to quickly process your order. We’re easy to work with, and we offer free returns (we pay the return shipping) if you want to return an unused stone. Plus a one year warranty. As the founder of a high-tech PR firm, I enjoyed working with our talented team, and helping some great companies excel, including Apple, Microsoft and Intel, and over 200 incredible start-ups that helped usher in the Internet era.

But not everyone has such good fortune. Which is why we are committed to giving back to our local community. We are following the B Corp framework at Biscotto di Sorrento from day one, with the goal of becoming fully certified as we grow. B Lab is the nonprofit network transforming the global economy to benefit all people, communities, and the planet.

We have also joined 1% for the Planet, an international organization whose members contribute at least one percent of their annual revenue to environmental causes to protect the environment.

And we have committed to donating at least 1% of all revenue to local Washington, DC organizations dedicated to helping provide food security for those most in need. And we’re just getting started—we’re going to do a lot more. One of my main motivations for starting Biscotto di Sorrento is to have a positive impact on our users, our suppliers, and our local community, and we’re putting our money where our mouth is.
